The perfect week night meal. Healthy, quick, delicious and BOYFRIEND APPROVED. I know, I once thought this an impossible feat. A quote from my boyfriend "Babe, this is better than Chipotle". Ingredients: 

  • 3 Avocados
  • 1 Small Tomato
  • 1/2 of a Red Onion
  • 2 Limes
  • 1 Package of Spanish Flavor Rice
  • 1 Can of Black Beans
  • Shredded Cheddar Cheese
  • Chopped Romaine Lettuce
  • 1 Rotisserie Chicken, shredded for the meat eaters (optional)
  • Salt and Pepper to Taste

I got my rice from a box of Spanish Flavored Rice from Whole Foods. It was great I highly recommend it this version, but they have a kind of rice like this at all grocery stores. Start the rice cooking in a skillet the stove. Instructions will be on the box.

Make your guacamole. Cut and mash the 3 avocados. Dice your tomato and red onion and add this into the mixture. Use to juice of 2 whole limes along with salt and pepper. Mix together and your done. Place this to to side.

Cook your black beans in a small skillet on the stove. These just need to get warmed up.

Place the rice and beans into a bowl. Top with cheese so it gets melted. Top with guacamole. Add the chopped lettuce. Finally, add the shredded chicken if you are a meat eater. Enjoy!
